Mince Pie Recipe

What better way to enjoy the Christmas period than in the kitchen making mince pies? Follow our recipe below for what we think are the best mince pies going. Makes Six Mince Pies Ingredients90g plain flour40g (3oz) icing sugar50g (3½oz) chilled, cubed butter1 medium egg yolk1 1/2 tbsp. cold water1 tsp. vanilla extractIcing sugar, to dust Mincemeat Recipe25 g (1oz) suet25g (2oz) dark brown sugar75g (5oz) mixed dried fruit (raisins & currants)25g (2oz) chopped glacé cherries½ apple½ large orange, finely grated zest and juice½ tsp ground mixed spice2 tbsp. ruby port DirectionsMix plain flour, icing sugar and butter.Add egg yolk. Save the white.Add water and vanilla extract. Mix again.Contain and chill for 30 mins.Grate apple and mix with all other mincemeat ingredients and set aside.Roll out pastry until about 3 – 4mm.Use a cutter to cut six circles and line a cupcake baking tin.Fill each one with the mincemeat.Roll up the pastry trimmings and use a different cutter – stars and Christmas trees are our favourite to cut six shapes.Place these shapes on top of each mince pie and glaze with egg white saved from earlier.Bake at 180 ºC for for 20 minutes.Remove from oven, allow to cool, and enjoy!
